Double Date! (11) (with an extra!)

When Rick and Brian agreed to be part of this, Rick (who’s a baker by trade) told me that he wanted to fatten the boys up “because they look a little too thin.” So what did he make this particular evening? You are in luck, dear reader, because I have the recipe right here!

BANANA AND COCONUT PANCAKES

1/3 cup plain flour
2 tablespoons rice flour
1/4 cup caster sugar
1/4 cup desiccated coconut
1 cup coconut milk
1 egg, lightly beaten
4 large bananas
2 oz unsalted butter
1/2 cup brown sugar
1/3 cup lime juice
1 tablespoon shredded coconut, for serving
strips of lime rind, for serving

Sift the flour into a bowl. Add sugar and coconut, mix well, make a well in the centre. Gradually whisk in the coconut milk and egg and beat until smooth.

Heat a small non-stick fry pan and brush lightly with melted butter. Pour three tablespoons of the pancake mixture and cook till the underside is golden. Turn it over and repeat. Transfer to a plate and cover with a small towel to keep warm. Repeat the process, rebuttering the pan as needed. Stack the pancakes between sheets of greaseproof or wax paper. Keep them warn while preparing the bananas.

Cut the bananas diagonally into thick slices. Heat the butter in the pan, add the bananas and toss till coated. Cook over medium heat until they soften and brown. Sprinkle with brown sugar, shake pan gently until the sugar has melted. Stir in lime juice.

Divide the bananas amoung the pancakes and fold over to enclose. Sprinkle with toasted coconut and lime strips.

I’ll leave you to ponder the moral of this little story. Sorry it dragged on a bit longer than I intended, but the Real World just gets in the way so damn much sometimes…
